How many of you like street food ? I know most of us just can't escape from those sizzler sounds, aroma of that food will make you stop by at your favorite food stall / cafe or restaurant. But this pandemic changed the way of our living but we won't let it change our taste. So I'll share some recipe which will be some of yours favorite just like mine. I like pani puri, frankie, pasta, kathi rolls, tikki chaat and you name it. Today I'm gonna share the recipe you can name paneer tikka frankie, paneer tikka kathi roll,paneer tikka roll without any fancy equipment you can make these rolls at home easily and you know what, we are going to prepare it with leftover rotis. For paneer tikka
Ingredients :
. Paneer 200 gm(cubes)
. Mustard oil 1 tbsp
.Hung curd 1/2 cup
.Ginger garlic paste 1 tbsp
.Onion 1/2 cup ( petals, diced)
.Capsicum 1/2 cup (diced)
.Lemon juice 1 tsp
. Fresh coriander 1 tbsp (chopped)
SPICES
. Kashmiri red chilli powder 2 tbsp
. Coriander powder 1tbsp
.Jeera powder 1tsp
.Turmeric powder 1/2 tsp
.Kasuri methi 1 tsp
.Garam masala 1tsp
.Salt to taste
.Live charcoal + Ghee
You also need green chutney, onions while assembling the roll.
METHOD
. In a mixing bowl, add mustard oil and kashmiri red chilli powder and mix well. Further add the remaining powder spices,ginger garlic paste, salt to taste, freshly chopped coriander leaves and hung curd, mix well further add paneer cubes ,diced capsicum and onion mix it well and marinate well.
. Skew the paneer, onions and capsicum and char them on open flame then apply some melted butter and cook them again nicely on open fire ( do it carefully or you can grill the paneer tikka on grill pan ) .Once it is done, take another mixing bowl, add Charred/grilled paneer tikka (remove the skewers) smoke the paneer tikka by placing live charcoal and pouring few drops of ghee of over it. Cover the bowl with plate immediately. Let it be covered for at-least 3 to 5 minutes.
. Meanwhile let's prepare the roti I'm using leftover roti but you can also prepare maida roti at home, you can also use tortilla for this recipe.I like to make single egg roll so for that heat tawa/ griddle put some ghee on tawa, pour one egg, you can also sprinkle some salt and pepper if needed, once it start cooking place roti over it apply some ghee/butter and flip it, then cook on the other side as well. Prepare all the roti same way, if don't want egg then just apply ghee on the roti and cook it.
Assembling the rolls
. Uncovered the paneer tikka bowl, further add 1 tbsp melted butter,green chutney,onions rings, lemon juice, lil bit of chaat masala. mix well to combine the flavours. You can adjust the flavors according to taste buds.
. Take roti and place it on flat surface/plate,place flavoured paneer tikka, add some more onions. To give it a slightly creamier flavour I added lil bit cream over it but it's totally optional.
. There you go your paneer tikka single egg Frankie is ready serve it with green chutney or enjoy it as it as.
