Shahi tukda without sugar syrup

Shahi tukda is one of the most popular indian dessert. Shahi tukda as name suggest 'shahi' delight! pieces of bread fried in ghee then soaked in sugar syrup then topped with rich and creamy rabdi. Rabdi is usually made by thickening the milk that take hours but we have provided the shorter recipe using powder milk that tastes just as good!

Shahi tukda is a bread pudding eaten in Pakistan and India, and it’s particularly famous in Delhi, Lucknow, and Hyderabad. In North India and Pakistan, where it’s made of bread deep-fried in ghee, soaked in sugar syrup, and then piled high with rabri and dried fruit and nuts but today we are preparing it without sugar syrup.
INGREDIENTS:
1. Bread -3 slice cut into triangle
2. Ghee - for frying
3. Milk - 500 gm (for rabdi)
4. Milk powder - 1 cup
5. Sugar - 2 tbsp
6. Saffron - few strands
7. Cardamom - 1 pod
8. Pistachio - handfull
METHOD
For shallow frying the bread slices
1. Remove the crust from the bread slices.
2. Cut each bread diagonally into 2 triangles.
3. Heat the ghee in a non-stick pan and shallow-fry the bread till golden brown in colour from both the sides.
4. Remove them in a plate and keep aside
For shahi tukda rabdi
1. Bring the milk to boil in a deep non-stick pan, stir in between.
2. Stir it well and then add 1 cup powdered milk.
3. Then add sugar and mix it well.Cook on a medium flame for approx. 7 to 8 min,while stirring continuously and scrapping the sides of the pan.
4. Add the cardamom powder and mix it well.
5. Keep aside to cool completely.
How to serve shahi tukda
1. Place the shallow fried bread pieces in a serving dish.
2. Pour rabdi on the top.
3. Top it with pistachio.
4. You can also garnish it with silver paper.
5. Keep it in refrigerator for 2 hours.
6. Serve it chill.
