TIKHAT MITHACHI PURI/ SPICY PURI

Tikhat mitachi puri is known as spicy puri. Puri or deep fried bread are very common across the India and these puris are served with various meals. We indians have variety of puris like plain puri,stuff puri,bedmi puri,khasta methi puri and we also have spicy puri. To make these tikhat puris we'll add spices directly into the wheat flour.

Ingredients:

Wheat flour- 2cup

Chickpea flour- 1/4 cup

Semolina-2tbsp

Coriander-2tbsp (chopped)

Coriander powder-2 tsp

Chilli powder-1tsp

Cumin powder-1tsp

Oil -2tbsp

Salt-accordingly

Water for kneading

Oil for frying


Process:

  1. Mix all dry ingredients, including the spices and coriander.
  2. Add 2 tbsp oil into the flour mix and rub it evenly until you get the crumble texture.
  3. Now add water little by little to form smooth, slightly stiff dough.
  4. Once dough is ready let it rest under damp cloth for about 20 mins.
  5. Heat oil in wok. Take small portions of the  dough and roll them in to the puris.
  6. Put the puris into medium heat oil and fry them. Gently push them under the oil so they puff up.
  7. Fry the puris until they are golden brown from the both sides.
You can serve these puri with yogurt, pickle chutney and tea or you can serve it with alloo sabji (potato gravy) to make a complete meal.
