Corn and paneer jalfrazi

Baby corn with vegetables and paneer is a great side dish that can be served with rice, daal, roti and pulao. Being Punjabi this is my favourite dish that you can also use to make Frankie. This flavorful combo of baby corn and paneer gonna hit your taste buds so let's start with the ingredients below 😉


          Ingredients
             
Baby corn- 3/4 cup,cut in lengthwise and blanched
Paneer- 1 cup, cut into strips.           
Spring onions whites-1/4 cup.            
Green capsicum thinly sliced-1/4 cup
Yellow capsicum thinly sliced-1/4 cup
Carrot thinly sliced-1/4 cup
Peas frozen or fresh-1/4 cup   
Tomato thinly sliced- 1/2  cup
Tomato puree-2 tbsp
Spring onions green-1/4 cup
Ginger garlic paste 1 tsp (optional)

Spices
      
Turmeric powder-1/4 tsp
Red chilli powder-1/2 tsp
Cumin powder -1/2 tsp
Coriander powder-1/2 tsp
Garam masala-1/4 tsp
Salt- accordingly

Oil, vinegar, sauce

Oil - 2 tbsp           
Vinegar- 1 tsp             
Soya sauce-1/2 tsp      
Tomato ketchup-2 tbsp
Sugar-1/4 tsp                 




Method

Heat the oil in wok and add the spring onion whites and saute for 1 min,add ginger garlic paste and saute for 1 min. Now add capsicum (both) peas(frozen) and carrots saute for 2 min. Keep the flame on medium. Now you will see capsicum turned soft then add baby corn and all spices. After that add tomatoes, tomato puree and tomato ketchup also add Soya sauce (don't add to much)  and saute for 1 min on medium heat. Now add sugar and vinegar and paneer and salt, mix it well and cook 2 min. Add 2 tbsp water and saute for another 2 min. Garnish with green spring onions
